Why cook with saffron?

How to prepare saffron for cooking

Don’t just toss threads into a pot. Bloom them first to release the colour and aroma evenly.

  1. Grind the threads lightly in a mortar.
  2. Add the warm liquid and stir.
  3. Rest 10–20 minutes until deep golden.
  4. Stir the liquid and threads into your dish.

Common mistakes to avoid

  • Using too much — a pinch is plenty; excess turns bitter.
  • Not blooming — threads added dry give uneven colour.
  • Boiling hard — use warm liquid, not a rolling boil, to protect the aroma.
  • Buying powder of unknown origin — whole threads are easier to verify.
