Rose Water: what it is, how to spot the real thing & recipes

What is rose water?
Rose water (Persian goláb) is a hydrosol — the water that comes off when damask rose petals (Rosa damascena) are steam-distilled. A single ingredient: rose and water.
It has a soft, naturally floral aroma and is a favourite in Persian, Middle Eastern and Mediterranean kitchens — from sweets and drinks to desserts.
Rose water vs. rose aroma (flavouring)
As with saffron: the real thing has one ingredient; the imitation has an ingredient list. Real rose water is a pure distillate; “rose aroma” is water (or alcohol) with added scent.

Quick rule: one ingredient (rose distillate) = real; a list with “aroma / alcohol / preservative / colour” = imitation. Read the label.
Rose water in the kitchen
Rose water is a liquid aroma — a few drops scent a whole dish. Start small and adjust.
- Syrups: sugar + water + a spoon of rose water — for pancakes, baklava and cocktails.
- Desserts: rice puddings, custards, creams, doughs.
- Drinks: a few drops in water, lemonade or tea.
- With rose tea: it deepens the floral note of our saffron & rose blend.

Persian tradition — goláb
In Persia rose water (goláb) has a centuries-old tradition. The most famous comes from the city of Káshán, where the rose harvest and goláb-gíri distillation take place each spring.
